If you’re interested in old dishes, you might look into something called “stuffed ham” (ham stuffed with greens and baked). I believe it was first brought to Kentucky by the Maryland Catholics who settled Nelson and surrounding counties in the 1780′s. It’s still a popular dish in Southern Maryland (St. Mary’s and Charles Counties), but getting hard to find in Kentucky now.
